Kek Lapis Kukus Prune

tp nk share jugak recipe nye..
wani buat kek ni time raya puasa haritu.. ade majlis makan2 kt rumah pcb ngan big family sebelah mama. so, buat la kek ni.
mama t'pksa beli pengukus baru, sbb kt rumah rehat kitorg tu xde pengukus. beli yg murah je. hehe
tp alhamdulillah, yg murah tu la yg jimatkan masa. setiap layer masak tak sampai 10 minit. mmg jimat masa. kadang-kadang wani cukupkan 10 minit jugak la.

ok, the recipe taken from Mat Gebu's weblog yg diambil dr weblog Bro Rozzan katanya.


Bahan-Bahannya :-)
  • 450 g mentega
  • 190 g gula halus (wani guna 130g)
  • 10 biji telur
  • 300 g biskut "Marie", dikisar halus
  • 1 tin kecil susu pekat manis (wani guna tak sampai 1 tin kecil)
  • 85 g seri kaya
  • 1 camca teh esen vanilla
  • 1 bekas prune sunsweet - dipotong kecil2.
  • 1 camca teh pewarna makanan merah, hijau dan kuning

Cara membuatnya (adapted version) :-)
  1. Panaskan oven pada suhu 180C (api atas dan bawah). Lenser tin berukuran ( 8 x 8 x 3 ) inci dengan mentega dan alas dasarnya dengan kertas minyak. Ketepikan.
  2. Putar mentega dengan gula halus hingga putih, masukkan telur satu persatu sambil terus memutar hingga kembang (adunan akan kelihatan berbiji2), masukkan seri kaya dan susu pekat manis. Putar hingga sebati.
  3. Perlahankan speed, masukkan biskut marie kisar sedikit demi sedikit hingga habis dan tuang esen vanilla. Gaul hingga semua rata, bahagi kepada 3 bahagian sama banyak, dan letak warna merah, hijau dan kuning pada tiap satu bahagian. Kacau hingga rata.
  4. Tuang 4 camca besar adunan warna kuning, ratakan dan kukus 10 minit atau hingga masak. Keluarkan dan tuang lagi 4 camca besar adunan kuning, ratakan dan kukus kembali hingga masak.
  5. Kemudian tuang 4 camca besar warna hijau, ratakan dan susun asam manis (prunes). Kukus kembali hingga masak, tekan2 sedikit dengan sudu dan tuang 4 camca besar adunan hijau, ratakan dan kukus hingga masak.
  6. Diikuti dengan warna merah sebanyak 2 lapis. Susun prune pada lapisan ke tiga. Buat hingga siap.
  7. Kek akan menjadi = Kuning 2 lapis + prune + Hijau 2 lapis + prune + Merah 2 lapis +prune dan seterusnya.


Cuma untuk steamed layer cake, anda perlu panaskan air di dalam pengukus terlebih dahulu sehingga mendidih. jika semasa proses melapis air di dalam pengukus berkurangan, cepat2 tambahkan air panas. perlu diingat, jangan tambah air sejuk, nanti proses mengukus terbantut. dan wani lebih prefer to use bekas plastik (yg microwaveable tu) sebab senang untuk keluarkan kek dr bekas, dan tak perlu menggris bekas plastik. tapi, kalau guna loyang besi, alaskan loyang dengan kertas minyak untuk elakkan melekat dr loyang. dan rajin-rajinlah mengelap penutup periuk kukusan dengan kain bersih, untuk elakkan permukaan kek berkawah. alhamdulillah, periuk kukusan yg mama wani beli tu xperlu dilap penutupnya. mungkin sebab bentuk dia yg leper, berbanding dengan periuk kukusan yg besi tu. (mama wani beli yg transparent punya penutup. senang nk jenguk! hehe)

Pandan with Chocolate Chips and Chopped Almonds Muffins

Kim's Moist Muffins

Serves: 12 (wani dpt 18 medium-sized cups)
Preparation time: 15 minutes or less

No melting butter or beating sugar until fluffy! Easy to cook and easy to eat!

Ingredients

  • 220 g self-raising flour (1 1/2 cups)
  • 1/2 - 3/4 cup vegetable oil (dinasihatkan guna 1/4 - 1/2 cawan je)
  • 3/4 cup buttermilk or regular milk (wani guna hampir 1 cawan santan)
  • 1/2 - 3/4 cup caster sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract (wani guna pandan paste)
  • 150 g added flavours (frozen raspberries, dark/milk/white choc bits, grated apple, mashed banana) (wani added choc chips, tp mama suggest xperlu add in choc chips, sbb kalau pandan flavour dh ok w/o choc chips)

Method
  1. Preheat oven to 180°C.
  2. Grease muffin tins or use liners.
  3. Mix all dry ingredients together and make a well.
  4. Mix all wet ingredients together and pour into the well.
  5. Add flavourings and mix well until just combined.
  6. Place in tins and bake for 15-20 minutes or until lightly browned. (maisya bakar dalam 25 minit)

Recipe notes
Over mixing will toughen the muffins. You can substitute the sugar with artificial sweeteners or Xylitol to make it lower in carbohydrates and sugar free. Buttermilk is lower in fat than regular milk but you can also use skim milk. Weighing the flour gives a much nicer muffin. I'm not sure why but these are by far the nicest muffins I've made. Raspberry and white choc chips are divine! A friend of mine uses mashed banana and passionfruit pulp in hers! I've adjusted the oil in the recipe because of a few recommendations... I have found lately that 3/4 cup is just a bit too oily. Thanks everyone for the great feedback! A couple of people have said their muffins are not as moist as I've described - you need to make sure you only have 150g of any added flavours! Any more and they are drier any less and too moist and oily! Thanks!

French Toast

Bahan-Bahannya :
  • 180 ml air (wani ganti susu low fat)
  • 360 g tepung roti
  • 45 g tepung gandum
  • 1/4 cawan yogurt (wani ganti dengan buttermilk)
  • 3/4 camca teh garam
  • 1 camca besar gula halus
  • 1 camca besar mentega/margarine (wani guna margarine)
  • 3 camca besar susu tepung
  • 1 1/2 camca teh instant yeast

Cara membuatnya :-)

  1. Satukan kesemua bahan dalam bekas kecuali mentega, uli hingga menjadi doh. Tambah mentega dan terus menguli 15 - 20 minit sehingga mendapat adunan yang kenyal dan licin. Rehatkan 1 jam. KAEDAH LAIN :- Masukkan semua bahan2 dalam Bread Maker dan pilih setting for dough, tekan "ON" dan biar hingga siap.
  2. Keluarkan doh, tumbuk untuk membuang udara dan uli 10 minit. Bahagikan kenapa 3 bahagian yang sama besar. Ambil satu bahagian, leperkan dan gulung ketat2 seperti membuat swissroll. Kemudian gelek sehingga kurang lebih 20 inci panjang atau mengikut saiz dulang oven masing2). Buat hingga siap dan alih ke dalam dulang yang telah disapu mentega, biarkan selama 45 minit hingga naik.
  3. Dengan pisau yang tajam, kelar menyerong 3 - 4 bahagian atas doh roti tadi dan bakar dalam oven yang telah dipanaskan pada suhu 190C selama 20 - 25 minit, bergantung pada oven masing2. Sapu mentega sejurus dikeluarkan oven. Biar sejuk sebelum dipotong.

Broccoli Soup with Garlic Bread

Broccoli Soup

Bahan-bahan:

2 ulas bawang putih (diracik halus)
1 biji bwg besar yg kuning (wani guna bawang besar merah)
2 biji broccoli (2 jambak broccoli? hehe)
2 biji cendawan butang atau shitake (wani guna sausage yg dipotong kiub kecil)
2 sudu besar serbuk pati ayam (wani guna perencah jenama Hilal)
sedikit all spice itali (wani guna mixed spice biasa)
2 sudu kecil serbuk lada putih (1 tsp je ok kot - ikut ur taste bud ok)
1/2 - 1 cwn susu -agak2 ye..nanti cair sangat pulak sup tu (wani guna susu segar jenama marigold)
sedikit minyak zaiton untuk tumis (wani guna minyak biasa)
garam secukup rasa


Cara-cara:
  1. Panaskan minyak, tumis bawang putih dan bawang besar hingga naik bau.
  2. Masukkan air 1.5 cawan.
  3. Masukkan serbuk lada putih, perencah (atau perasa), garam secukup rasa.
  4. Masukkan broccoli, cukup sehingga nampak broccoli layu.
  5. Padamkan api dapur, masukkan broccoli dan air rebusan ke dalam blender dan blend hingga halus.
  6. Masukkan semula ke dalam periuk, panaskan bersama susu (ikut kepekatan masing2). jika perlu tambah perasa, boleh tambah. masukkan sausage kiub, bila mendidih, padamkan api.

Garlic Bread

Roti baguet - hiris setebal 1 inci (wani beli siap je kt Giant. hehe)

Garlic Butter:

5 tablespoon salted butter
4 ulas bawang putih (dipotong halus atau ditumbuk lumat)
1/2 teaspoon serbuk lada putih
1 teeaspoon daun parsley kering (kalau ada yg fresh lg bagus)

  1. Gaul semua bahan sapuan. sapu pada roti baguet yang telah dihiris setebal 1 inci.
  2. Susun atas dulang pembakar, bakar dlm oven pada suhu 200C selama 20 minit sehingga garing (ikut kesukaan masing2).

Chewy Gooey Yummy Brownies



wani buat ni 2 hari lepas. semalam ade majlis makan2 kt rumah, panggil kwn2 uia n neighbours. so, i baked this brownies too! sbb senang, not need to use mixer. utensils needed are; 3 bowl, a whisk, wooden spatula, baking tin. that's all! enjoy~



Chewy Gooey Yummy Brownies

Ingredients

(A) - to be melted

250 grams butter - cut into cubes (boleh guna 100g-150g shj ye, lebih dari itu risau terlalu berminyak)

400 grams chocolate - cut into cubes or grate them




(B)

5 large (i used A sized) eggs

1 teaspoon vanilla essence

1 tablespoon chocolate emulco

290 grams brown sugar



(C) - to be sifted together

90 grams all-purpose flour (i used Hong Kong Flour)

50 grams cocoa powder

100 grams nuts (it's optional. toast them first and mix them with flour and cocoa powder)


Instructions

1. Preheat the oven to 160C. prepare a 9x12 inch baking tin with parchment or paper. set aside.

2. Double boil the butter and cooking chocolate. or u may also place them in microwave for 30 seconds. after that, take it out from microwave and stir until they are completely melted. set aside, let it cool

3. In another bowl, beat the eggs, vanilla essence, chocolate emulco and brown sugar using whisk. whisk them together until sugar is ressolved.

4. Combine the (A) ingredients and (B). stir them well. quickly proceed to step no. 5 as this mixture easily get harden that will cause you a little bit difficult to fold in the flour.

5. Gradually add the (C) ingredients into the (A) and (B) mixture. this time, use your wooden or plastic spatula to fold in the flour. avoid overmixing the ingredients in this step.

6. Spoon over the batter into the baking tin, spread them well.

7. Bake at 160C for 45 minutes or until skewer inserted comes out clean.

8. Take it out from the oven, let it cool for 10 minutes. quickly cut the brownie into pieces. notice that this type of brownie can get harden easily. once it is cooled, it'll be difficult for you to cut them.

Granola



Granola is a breakfast food and snack food consisting of rolled oats, nuts, honey and sometimes rice, which is baked until crispy. During the baking process the mixture is stirred to maintain a loose, breakfast cereal type consistency. Dried fruit, particularly raisins or dates, are sometimes also added.



CRUNCHY GRANOLA

book: Cooking Thin with Chef Kathleen by Kathleen Daelemans

1 cup firmly packed dark brown sugar
1/2 cup water
4 teaspoons vanilla essense
1 teaspoon salt
8 cups rolled oats
2 cups chopped walnuts, pecans or slivered almonds
dried fruits (optional)

Preheat oven to 160 C.
Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. ( wani larutkan dengan air panas je)
Remove from microwave, add vanilla extract and salt.
In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed.
Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy. ( setiap 10 minit wani keluarkan dr oven dan gaul supaya dapat bakar sekata )
When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time.
When granola has cooled completely, store in an airtight container.

Brownies Kukus Lapis Cheese

wani masih lg merayau2 di blog org laen melihat makanan yg best.
bile agaknye exam nk habis ye?walaupun hanya tinggal (sambil mengira; 1,2,3,4,5) 5 hari lagi, wani tetap x boleh duduk diam.
jadi, bila belek flickr, jumpa satu gmbr yg rasa nye xde lagi entry pasal die dlm blog maen masak2 ni. kesian dia.
jadi, utk tidak menghampakan dia (dan juga buat rujukan sendiri di masa hadapan - cewah!), wani letak cni gmbr dia okeh!
Layered Brownies n Cheese


eh2, sapa dia ni? ha, jom tgk biodata dia! (ya Allah, ampunkan hambaMu ini.. mmg xde keje!!)

  • jantina : eh? ade jantina ke? pompuan/betina kot - sbb pakai skirt a.k.a cupcake liner yg ala2 smocking gown. hehe
  • date of birth : 13th of january 2008 (n 'mati' dibaham monsters kt rumah pada hari kejadian jugak)
oh, yg ini kawan yg atas tu jugak. cuma dia diberi kasih sayang yg lebih sket. ade drizzled chocolate ganache. hehe

Brownies Cheese Cake
INGREDIENTS
Cake
Brownie Kukus 1000 gm
Eggs 400 gm
Cooking Oil 150 gm
Water 400 gm
Cheese Filling
Cream Cheese 500 gm
Sugar 120 gm
Eggs 150 gm
METHOD
  • Mix Brownie kukus, egg, cooking oil and water togather for 2 minutes at low speed.
  • Fill half of the batter in to the mould and steam for 15 minutes.
  • Mix cream cheese and sugar till smoth for 2 minutes.
  • Add egg and beat for another 2 minutes.
  • Pour on top of (steamed) brownie kukus and steam another 15 minutes.
  • Pour in second last batter of brownie kukus on top of (steamed) brownie kukus and stem for another 20 minutes.
ok la, ttiba wani ada 'semangat' nk study. doakan wani dipermudahkan nk jwb soalan ye semua ^__^
